Only 21% of consumers surveyed in 2015 had ever purchased fresh ham hocks—that flavour-packed cut from a pig’s front leg (whereas smoked ham hocks typically come from the hind leg).
 

Fresh hocks are ideal for braising, found in menu applications like osso bucco, stew, soup, and many others. However, despite their flavour—and inexpensive cost—quite a few chefs and consumers alike are intimidated by this odd-looking cut of pork.

So, we bring you a couple of our newest recipes on the blog featuring fresh ham hocks.
