Pork Tex-Mex Soup

Ingredients:

  • 1 lb (450 g) Ontario pork shoulder or loin, cubed and trimmed of visible fat
  • 1 Tbsp (15 mL) vegetable oil
  • 1 carrot, cubed
  • 1 green pepper, cubed
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 1-14 oz (400 mL) can diced tomatoes
  • 1-19 oz (540 mL) can black beans, drained and rinsed
  • 1-14 oz (400 mL) can mixed beans, drained and rinsed
  • 1 tsp (5 mL) EACH: cumin, oregano and chili powder
  • 1 Tbsp (15 mL) paprika
  • 2 cups (500 mL) low sodium vegetable broth
  • 2 cups (500 mL) water
  • Salt and pepper to taste
  • 1/2 cup (125 mL) cilantro, minced

Cooking Instructions:

  1. Brown pork in vegetable oil over medium-high heat in a soup pot. Add carrot, green pepper, onion and garlic. Sauté for 2 minutes. 
  2. Add can of diced tomatoes, black beans and mixed beans. Stir in seasonings: cumin, oregano, chili powder and paprika.
  3. Add vegetable broth and water. Simmer for 30 minutes. Add salt and pepper to taste.
  4. Portion into 8 oz bowls and garnish with a sprinkling of cilantro.
