Ingredients:

  • 1 pkg (500 g) Ontario ground pork
  • 1 small onion, finely diced
  • 2 tbsp (30 mL) chopped fresh parsley
  • 2 tbsp (30 mL) horseradish
  • 1/4 tsp (1 mL) each salt and pepper
  • 1 egg, lightly beaten
  • 1/2 cup (125 mL) fresh breadcrumbs

Mashed Potatoes:

  • 3 yellow fleshed potatoes, peeled and chopped (about 1 lb/500 g)
  • 1/4 cup (60 mL) butter
  • 1/4 tsp (1 mL) each salt and pepper
  • 1/4 cup (60 mL) grated parmesan cheese

Cooking Instructions:

Mashed Potatoes:

  1. In a saucepan, cover potatoes with water and bring to a boil. Simmer for about 20 minutes or until tender. Drain well and return to pot with butter, salt and pepper.
  2. Using a potato masher, mash potatoes until smooth. Stir in cheese and set aside.

Mini Meatloaves

  1. In a large bowl, combine pork, onion, parsley, horseradish, egg, breadcrumbs, salt and pepper. Divide mixture into four and shape into 4 inch (10 cm) ovals and pat to 1 inch (2.5 cm) thick.
  2. Place on parchment paper lined baking sheet. Divide mashed potatoes on top of each meatloaf. Bake in 375 F (190 C) oven for about 20 minutes or until meat thermometer inserted in centre registers 160ºF (71ºC) and potatoes are golden on top.
