Bacon and Cheese Stuffed Baguette

Ingredients:

  • 8 slices Ontario bacon, diced
  • 1 cup cream cheese
  • 1/3 cup Greek yogurt or sour cream
  • 1/2 cup mozzarella cheese, grated
  • 2 tsp Dijon mustard
  • 1 tsp lemon juice1 cup green onions, finely sliced
  • 1/2 tsp pepper
  • 1 – 20” French baguette

Cooking Instructions:

  1. Preheat oven to 350ºF
  2. In a sauté pan, cook bacon until lightly brown. Remove onto a plate lined with paper towel and allow to cool.
  3. In a bowl mix remaining ingredients. Stir in bacon and mix until well combined.
  4. Cut ends off the baguette. Slice down centre of loaf, but not all the way through. Scoop out all but ½" of bread with a spoon. Cut loaf into two pieces (easier to handle) and stuff with cheese mixture. Press bread together tightly.
  5. Transfer to a large piece of foil and wrap tightly. Bake for 20 minutes, or until bread is crusty and cheese inside is melted.
