Enjoy tender and juicy slow cooker pork chops smothered in creamy mushroom and pepper sauce. An easy crockpot recipe perfect for family dinners

Ingredients:
- 4 bone-in Ontario pork chops, 1 inch/2.5 cm thick (about 2 lb/1 kg)
- 3 cups (750 mL) water
- 1/4 cup (60 mL) kosher salt
- 3 tbsp (45 mL) brown sugar
- 3 sprigs fresh thyme
- 1 tbsp (15 mL) peppercorns
- 3 cups (750mL) ice cold water
- 1/4 cup (60 mL) all purpose flour
- 3 tbsp (45 mL) canola oil
- 1 large onion, thinly sliced
- 1 pkg (8 oz/227 g) sliced mushrooms
- 1 large red pepper, thinly sliced
- 1 cup (250 mL) beef broth
- 3 tbsp (45 mL) chopped fresh parsley
- 1 tbsp (15 mL) cornstarch
- 1 tbsp (15 mL) water
Cooking Instructions:
- Trim any excess fat from pork chops. Place pork chops in large deep bowl.
- In a saucepan, bring water to simmer. Stir in salt and sugar until salt is dissolved. Remove from heat and add thyme and peppercorns. Stir in ice cold water. Pour over pork chops and refrigerate for at least 30 minutes or up to 4 hours.
- Remove pork chops from brine and pat dry. Coat both sides of each pork chop in flour; set aside.
- In a large nonstick skillet, heat 3 tbsp (45 mL) of oil over medium high heat. Brown pork chops and place in slow cooker. Return skillet to medium high heat and saute onions, mushrooms and peppers for about 8 minutes or until starting to brown and soften. Spread over top of pork chops.
- In a bowl, whisk together broth, parsley and remaining flour. Pour into slow cooker; cover and cook on Low for 4 hours or on High for 2 hours. Whisk together cornstarch and water. Uncover and remove pork chops to a serving platter. Stir in cornstarch mixture and cook on High for about 5 minutes or until thickened. Spoon over top of pork chops to serve.
